A delicious and healthy alternative to traditional lasagna, made with zucchini instead of pasta, perfect for those following the Whole30 diet.

Ingredients

Scale
  • 4 medium zucchinis, sliced
  • 1 lb ground beef or turkey
  • 1 cup marinara sauce (sugar-free)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a skillet, cook the ground meat over medium heat until browned. Add garlic and Italian seasoning, and cook for another minute.
  4. Stir in the marinara sauce and let it simmer for 5 minutes.
  5. In a baking dish, layer zucchini slices, meat sauce, ricotta cheese, and mozzarella cheese. Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • For a vegan option, substitute ground meat with lentils and ricotta with cashew cheese.
  • Make sure to use a sugar-free marinara sauce to keep it Whole30 compliant.
  • Letting the lasagna sit before serving helps it hold its shape better.
