Ingredients

Scale
  • 4 cups ripe peaches, peeled and chopped
  • 1 cup sugar
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cardamom
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, combine the chopped peaches and sugar. Let it sit for about 30 minutes to release the juices.
  2. Add the grated ginger, ground cardamom, and lemon juice to the pot.
  3. Cook the mixture over medium heat, stirring frequently, until it comes to a boil.
  4. Reduce the heat and let it simmer for about 1 hour, stirring occasionally, until it thickens.
  5. Once thickened, use an immersion blender to puree the mixture until smooth.
  6. Pour the hot peach butter into sterilized jars and seal them while hot.
  7. Let the jars cool completely before storing them in the refrigerator.

Notes

  • Ensure the peaches are ripe for the best flavor.
  • This peach butter can be stored in the refrigerator for up to 2 weeks.
  • For a spicier flavor, increase the amount of ginger and cardamom.
