1/2 cup water
1 ripe peach, diced
1/4 cup cornstarch (for dusting)
1/2 teaspoon vanilla extract

Add water and vanilla extract, and mix until smooth.
Transfer the mixture to a microwave-safe bowl and cover with plastic wrap.
Microwave on high for 1 minute, stir, then microwave for another minute.
Stir again and microwave for an additional 30 seconds until the mixture is sticky and translucent.
Let it cool slightly, then dust your hands and a clean surface with cornstarch.
Take a portion of the mochi dough and flatten it in your hand.
Place a small amount of diced peach in the center and fold the mochi around it, sealing it well.
Repeat with the remaining dough and peaches.
Dust the finished mochi with more cornstarch to prevent sticking.
Notes
Ensure the peaches are ripe for the best flavor.
Store mochi in an airtight container to keep it fresh.
