This simple Goumi berry pie recipe combines the sweet and tart flavors of Goumi berries in a golden, flaky crust. Perfect for beginners and experienced bakers alike, this pie is a delightful dessert that’s easy to make and a treat to share with loved ones.

Ingredients

Scale
  • 2 cups fresh Goumi berries (washed and stems removed)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pre-made or homemade pie crust

Instructions

  • Preheat the Oven: Set your oven to 375°F (190°C) and prepare your pie dish.
  • Cook the Filling: In a saucepan, combine Goumi berries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries release their juices.
  • Thicken the Mixture: Add cornstarch and stir until the mixture thickens to a jam-like consistency. Remove from heat and let it cool slightly.
  • Prepare the Crust: Line your pie dish with the crust and poke a few holes with a fork to prevent puffing.
  • Assemble the Pie: Pour the cooled berry filling into the crust. Cover with a lattice or full crust and seal the edges.
  • Bake the Pie: Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  • Cool and Serve: Let the pie cool completely before serving. Enjoy with whipped cream or vanilla ice cream!

Notes

  • If using frozen Goumi berries, thaw and drain them before cooking.
  • For extra flavor, add a pinch of cinnamon or nutmeg to the filling.
