One Pot Chicken Shawarma Rice is a delicious and easy-to-make dish that combines tender chicken marinated in shawarma spices with fluffy rice, all cooked in one pot for a hassle-free meal.

Ingredients

Scale
  • 1 lb chicken thighs, boneless and skinless
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the chicken thighs and shawarma spice mix, cooking until the chicken is browned on all sides.
  4. Add the diced tomatoes and chicken broth, bringing the mixture to a boil.
  5. Stir in the basmati rice, cover the pot, and reduce heat to low. Cook for 20 minutes or until the rice is tender and has absorbed the liquid.

  7. Garnish with fresh parsley and serve warm.
