A delicious and healthy twist on the classic shepherd’s pie, using cauliflower mash instead of traditional potatoes for a low-carb option.

Ingredients

Scale
  • 1 lb ground beef or lamb
  • 1 cup diced onions
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 head cauliflower, chopped
  • 1/4 cup cream cheese
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef or lamb over medium heat. Drain excess fat.
  3. Add onions and garlic to the skillet and sauté until softened.
  4. Stir in mixed vegetables, beef broth, and Worcestershire sauce. Simmer for 10 minutes.
  5. While the meat mixture simmers, steam the cauliflower until tender.
  6. In a blender, combine steamed cauliflower and cream cheese. Blend until smooth and creamy.
  7. Spread the meat mixture in a baking dish and top with cauliflower mash.
  8. Sprinkle shredded cheese on top if desired.
  9. Bake in the preheated oven for 20-25 minutes until the top is golden.
