Loaded Steak Quesadillas are a delicious and hearty meal packed with flavor, featuring tender steak, melted cheese, and fresh vegetables all grilled to perfection.

Ingredients

Scale
  • 1 lb flank steak
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Season the flank steak with garlic powder, cumin, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side, or until desired doneness.
  3. Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly.
  4. In the same skillet, add the remaining olive oil and sauté the sliced bell pepper and onion until softened.
  5. Place a tortilla in the skillet, sprinkle half with cheese, add a layer of sliced steak, sautéed vegetables, and top with more cheese.
  6. Fold the tortilla in half and cook until golden brown and the cheese is melted, about 2-3 minutes per side.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve hot with salsa or guacamole.

Notes

  • For extra flavor, marinate the steak for a few hours before cooking.
  • Feel free to add other vegetables like mushrooms or spinach.
  • Serve with sour cream or your favorite dipping sauce.
