- 4 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Preheat the oven to 400°F (200°C).
- In a saucepan, bring the vegetable broth to a boil and add the orzo. Cook according to package instructions until al dente.
- While the orzo is cooking, heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper.
- Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes until the skin is crispy.
- Flip the salmon and add minced garlic, lemon juice, and lemon zest. Cook for an additional 3-4 minutes until the salmon is cooked through.
- Drain the orzo and mix it with the remaining lemon juice and zest. Season with salt and pepper.
- Serve the salmon over the lemon orzo and garnish with fresh parsley.
Notes
- For a healthier option, you can grill the salmon instead of pan-frying.
- Feel free to add vegetables like spinach or asparagus to the orzo for added nutrition.
- This dish pairs well with a side salad or steamed vegetables.
