1 lb (450g) sirloin steak (or ribeye/flank steak)
8 oz (225g) egg noodles (or spaghetti/fettuccine)
4 tablespoons unsalted butter
4 cloves fresh garlic, minced
Salt and pepper, to taste
1 tablespoon steak seasoning (optional)
2 tablespoons fresh parsley, chopped
ÂĽ cup grated Parmesan cheese
½ cup reserved pasta water
Red pepper flakes (optional, for spice)
Olive oil (for searing steak)
Season and Prep the Steak:
Pat the steak dry. Season generously with salt, pepper, and steak seasoning if using. Let rest for 20 minutes at room temperature.
Sear the Steak:
Heat a heavy-bottomed skillet over medium-high heat. Add a small splash of olive oil. Sear the steak for 3–4 minutes per side for medium-rare. Add 1 tablespoon butter and spoon the melting butter over the steak during the last minute of cooking. Remove steak from pan and let rest. Slice thinly against the grain.
Cook the Noodles:
Meanwhile, cook noodles in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water, then drain noodles (do not rinse).
Make the Garlic Butter Sauce:
In the same skillet, lower heat to medium. Melt remaining butter and sauté minced garlic for about 30 seconds, until fragrant but not browned.
Assemble:
Add cooked noodles into the skillet. Toss in garlic butter to coat. Add sliced steak and a splash of reserved pasta water. Stir gently to create a silky sauce that clings to the noodles.
Finish and Serve:
Sprinkle with Parmesan cheese and fresh parsley. Toss gently. Adjust seasoning if needed. Serve immediately.
Don’t skip resting the steak — it keeps the meat juicy and flavorful.
Add extra butter if you want a richer, silkier sauce.
For extra heat, toss in red pepper flakes with the garlic.
Store leftovers in an airtight container for up to 2 days. Reheat gently with a splash of broth or water.
Swap proteins easily: chicken or shrimp work great instead of steak.
