Ingredients

Scale

For the Dough:

  • 2 ¾ cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • ½ teaspoon salt
  • ½ cup cottage cheese (full-fat or low-fat)
  • ¼ cup warm milk
  • 2 tablespoons sugar
  • 1 large egg
  • 2 tablespoons unsalted butter (softened)

For the Filling:

  • ⅓ cup brown sugar
  • 1 ½ tablespoons ground cinnamon
  • 2 tablespoons unsalted butter (melted)

Optional:

  • ½ cup heavy cream (to pour over rolls before baking)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Prepare the Dough:

    • Combine warm milk and sugar in a bowl. Stir in yeast and let sit for 5–7 minutes until frothy.
    • In a large bowl, mix flour and salt. Add cottage cheese, egg, softened butter, and yeast mixture. Stir to combine.
    • Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1–2 hours until doubled in size.
  • Make the Filling:

    • Mix brown sugar and cinnamon in a bowl.
    • Melt the butter and set aside.
  • Roll and Shape:

    • Punch down the dough and roll into a 12×18-inch rectangle.
    • Spread melted butter over the dough and sprinkle evenly with the cinnamon-sugar mixture.
    • Roll the dough tightly into a log and cut into 8–10 rolls.
  • Proof and Bake:

    • Place rolls in a greased baking dish, leaving space for them to expand. Cover and let rise for 30–45 minutes.
    • Preheat oven to 350°F (175°C). Optional: Pour heavy cream over the rolls. Bake for 25–30 minutes until golden brown.
  • Add the Glaze:

    • Mix powdered sugar, milk, and vanilla extract. Drizzle over the warm rolls.

Notes

  • Substitute heavy cream with half-and-half for a lighter option.
  • Add nuts or dried fruits to the filling for extra flavor.
  • Rolls can be frozen before or after baking for easy reheating.
