Ingredients
Scale
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup crushed graham crackers
1 cup fresh strawberries, hulled
8 oz dark chocolate, melted
1 tbsp coconut oil (optional)
Instructions
In a mixing bowl, beat the softened cream cheese until smooth.
Add powdered sugar and vanilla extract, mixing until well combined.
Fold in the crushed graham crackers until the mixture is thick and creamy.
Form small balls of the cheesecake mixture and insert a toothpick into each strawberry.
Dip each strawberry into the cheesecake mixture, covering it completely.
Place the coated strawberries on a baking sheet lined with parchment paper.
Chill in the refrigerator for about 30 minutes to set.
Once set, dip each cheesecake-covered strawberry into the melted dark chocolate.
Return to the baking sheet and let the chocolate harden.
Serve chilled and enjoy!
Notes
For a smoother chocolate coating, add coconut oil to the melted chocolate.
These bites can be made a day in advance and stored in the refrigerator.
Feel free to use white chocolate instead of dark chocolate for a different flavor.
