1/2 cup sour cream
1/4 cup green onions, chopped
1/2 teaspoon garlic powder
Salt and pepper to taste
Olive oil for brushing

Wash and scrub the potatoes, then pierce them with a fork.
Bake the potatoes for about 45 minutes or until tender.
Let the potatoes cool slightly, then cut them in half lengthwise.
Scoop out some of the flesh, leaving a thin layer of potato in the skin.
Brush the potato skins with olive oil and season with salt and pepper.
Place the skins on a baking sheet and bake for an additional 10 minutes until crispy.
Remove from the oven and sprinkle cheese inside each skin.
Return to the oven and bake until the cheese is melted and bubbly.
Top with sour cream and green onions before serving.
Notes
For extra flavor, add cooked bacon bits or jalapeños as toppings.
These can be made ahead of time and reheated before serving.
Adjust the cheese type for different flavors, such as pepper jack or mozzarella.
