Ingredients
Scale
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 packet (2 1/4 teaspoons) active dry yeast
1/2 cup milk, warmed
1/4 cup unsalted butter, melted
1 large egg
1 cup grated carrots
1/2 cup chopped walnuts (optional)
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
Instructions
In a bowl, combine warm milk and yeast; let it sit for 5 minutes.
In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt.
Add the yeast mixture, melted butter, and egg to the dry ingredients; mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth.
Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Roll out the dough into a rectangle, spread softened butter, and sprinkle with cinnamon and sugar mixture.
Evenly distribute grated carrots and walnuts over the dough, then roll it tightly.
Slice the roll into 12 pieces and place them in a greased baking dish.
Cover and let rise for another 30 minutes.
Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden brown.
While baking, mix cream cheese, powdered sugar, and vanilla to make the frosting.
Once rolls are baked, let them cool slightly and then spread the cream cheese frosting on top.
Notes
For a richer flavor, add raisins to the filling.
These rolls can be made ahead and frozen before baking.
Adjust the sweetness of the frosting to your preference.
