Ingredients
Scale
2 lbs beef chuck roast
1 onion, chopped
4 cloves garlic, minced
3 dried guajillo chiles
2 dried ancho chiles
1 tsp cumin
1 tsp oregano
4 cups beef broth
Salt and pepper to taste
8 corn tortillas
2 cups shredded cheese (such as Oaxaca or mozzarella)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions
In a pot, toast the dried chiles until fragrant, then soak them in hot water for 15 minutes.
In a blender, combine soaked chiles, onion, garlic, cumin, oregano, and a cup of beef broth. Blend until smooth.
In a large pot, sear the beef chuck roast on all sides, then add the blended sauce and remaining beef broth.
Season with salt and pepper, cover, and simmer for 2-3 hours until the meat is tender.
Remove the meat, shred it, and return it to the pot to soak in the juices.
Heat a skillet over medium heat, place a tortilla in the skillet, and sprinkle cheese on one half.
Add a portion of the shredded meat on top of the cheese, fold the tortilla, and cook until the cheese is melted and the tortilla is crispy.
Repeat with remaining tortillas and serve with chopped cilantro and lime wedges.
Notes
For extra flavor, marinate the meat overnight in the sauce.
