Ingredients

Scale
  • 1.5 lbs pork tenderloin
  • 1 cup apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, combine apple cider, brown sugar, Dijon mustard, garlic, thyme, salt, and pepper. Bring to a simmer over medium heat.
  3. Cook until the mixture is reduced by half, about 10-15 minutes.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Season the pork tenderloin with salt and pepper.
  5. Sear the pork on all sides until browned, about 3-4 minutes per side.
  6. Brush the apple cider glaze over the pork tenderloin.
  7. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let the pork rest for 5 minutes before slicing and serving with the remaining glaze.

Notes

  • For a sweeter glaze, add more brown sugar to the sauce.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
